Made rosemary chicken and spicy green beans tonight for dinner. So flavorful!!
Green beans were very easy. For two people we used about a half pound Green beans, 1 tbsp butter, garlic and red pepper flakes.
Sauté the garlic in butter until lightly brown. Add in washed green beans and toss so butter and garlic coats the beans. Sprinkle red pepper flakes to taste. Cover and simmer for about 8 minutes. Taste for preference. We like ours slightly crispy.
Chicken: Preheat oven to 425. Use two boneless chicken breasts (about half pound each) and cut slits into sides. Coat with olive oil, salt, pepper and assorted preferred spices. Once coated, stuff rosemary and chopped onion into the breasts. Bake 20-25 minutes until no pink inside.
Serve with rice and voila:
Ps. I personally love the Goya rices. For this dinner, we bought the Goya Mexican rice. Follow directions on the box. It's delicious!
